Healthy Weekend Breakfasts

My friend John is a 27 year old professional who loves food, but doesn't have a lot of time in the week to experiment with cooking ideas. Trying to maintain a healthy diet he has come up with a few weekend breakfasts he says are filling and most importantly delicious but more nutritious than a fry-up.











Eggs and toast with my paper
What's in it?
2 slices of whole grain toast, about 15 cherry tomatoes fresh from the garden, 2 scrambled eggs and of course a coffee.
Why do you like it?
It's quick to make tastes really good and only costs $2.20 per serve.



The nutrition low down: what a great nutritionally balanced meal which still allows you to enjoy a weekend treat while reading the paper. The cooked tomatoes give you plenty of antioxidants (such as lycopene), fibre and a serve of vegetables. If you can find fresh then canned tomatoes work well on a breakfast plate. Eggs are low in fat and high protein. Wholegrain toast adds in more fibre and carbohydrates. This meal should keep you feeling full all day so you can go out and enjoy your day off.

Pancakes (wholemeal flour, egg, low fat milk) + low fat plain yoghurt + mixed berries

Why do you like it?
It's so easy to make but impresses visitors every time.



The nutrition low down: This one looks amazing and is packed full of nutrients with those colourful berries. Buying frozen berries will save money and make sure they are always available year round (they have just as many nutrients as fresh berries). The yogurt gives you calcium and protein and it's wet texture alleviates the need for sauces which can be high in sugar. The pancakes themselves are a healthy variety with no added sugar. The wholemeal flour means you get more fibre too.

  1. For a healthy and yummy breakfast I can't beat good old porridge. I like it with cinnamon, berries or banana and some brown sugar. If I've got some nuts and seeds lying around I'll throw them on top too. Yum!

    Sounds like a warming breakfast for a chilli morning. Porridge is made from whole oats which are a great source of fibre (for a healthy digestive system and heart) and very filling so you don't overeat later in the day. You're onto a winner with your toppings too. A serving of fruit in berries or banana and the nuts and seeds are full of unsaturated healthy fats (the kind that are good for your heart).
